Dos Margaritas Chile Con Queso (perfect for Christmas Eve tamales, a TX tradition)
Margarita #2 here. I have fond memories of growing up, visiting my grandmother Billie Love at her home in Corsicana (when we lived in Midland). The first night we arrived, she would always serve chips and her famous chili con queso. Her secret? Beer. Trust me. Make it. Share it with your guests or family this Christmas or anytime. Ingredients:
1 loaf of velvet-y cheese, cubed
8 oz of Dos Margaritas Salsa, mild or medium hot as you prefer
2/3 of 1 light beer (what to do with the rest? I’ll let you decide)*
If you don’t like to cook with booze, you can use a non alcoholic beer
Method:
Add ingredients to a double boiler or slow cooker
Heat on med-low, stirring occasionally
When melted, serve with chips, veggies, Christmas tamales, or tennis shoes
